Anna love them,too,so I was trying to make something really easy,not a big fuzz and healthy. I found this batter recipe here,(I used only 3 apples)but of course I’ve made few modifications..
- 1/4 cup GF all purpose flour
- Zest from one orange
- 1/4 tsp almond extract
- I substitute the yogurt with sour cream
- I increased the baking powder to 1/2 tsp.
If you see that your batter is really thick and doesn’t look like a batter at all,just add few tbs of milk.
For the caramel sauce:
- 2 tbsp butter
- 1/3 brown sugar
- 1/2 cup half and half
Put all the ingredients in a saucepan in a medium low heat,stir for 5-7 minutes. The sauce is ready! Let it cool a little bit before you use it!
I always make my own caramel sauce and this one is absolutely great! nice and thick.
To marry the flavors,I made whip cream with walnuts and caramel sauce on top. Variety is everything in our house,we have some picky eaters…unfortunately!!
For the apple rings:
Preheat the oven at 350 F.
Peel the apples and remove the core, Cut them about 1/4 inch
Dust them with a little bit of sugar and cinnamon-this is optional,you can do it like that if you don’t want the caramel sauce or the whip cream-
Grease a wire rack,put parchment paper on a baking sheet and put the greased wire rack on top.
Dive the apple rings into the batter and put the on the rack.
*You can fry them as well,but I preferred to bake them.
The house was bathed with the divine aroma of the caramel sauce and the apple rings!
