Roasted cheesy tomato soup!

Cheese is on the spotlight again,but it shares it with the tomatoes.. Tomato soup..Yum Yum! It may sounds boring and bluh but not this one! is so easy and so delicious that you’ll want to eat the whole pot of soup!

The ingredients:

  • 5-6 roma tomatoes
  • 2 cups vegetable broth
  • 1/4 tsp chili peppers
  • 1/4 tsp salt
  • 1 red pepper,diced
  • 2 cloves of garlic
  • 1 medium onion
  • a pinch of paprika
  • 1/4 cup shredded Parmesan
  • 1/4 cup olive oil

How we make it:

Preheat the oven at 375 F.

Wash and cut the tomatoes into thirds, Drizzle with a little olive oil and let them roast for about 15-20 minutes.




Add all the ingredients in the blender except the cheese and the oil. Blend them  until puree them and pour it in the pot to heat it. When it starts to simmer,let it for couple of minutes and remove from heat.

Add the cheese.You can add some chopped green onions as I did and just a little bit of cream. I made some garlic cheese  bread to accompany the soup.


The soup is scrumptious!!
