Healthy almond butter brownie bites

Last week,I remembered that I have dates in my pantry and I had to make something with them! With their natural sweetness and their soft sticky texture is very hard not to love them! In Greece we stuff them with soft cheese and drizzle some honey and chopped walnuts on top! Yummy!

I was looking for something tasty,a low caloric,brownie like recipe and I found this one,with some additions,of course!

Ingredients:

  • 3/4 cup raw almonds
  • 1 tablespoon cocoa powder
  • 12 dates
  • 3 tablespoons raw almond butter
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Place the almonds in a food processor and process till you get an almond meal. Set aside.

Process the pitted dates,until they become like a paste.

Add the rest of the ingredients and process until you will get a paste.

Wet your hands and put the paste in a small squared bowl or pan. Let it sit in the fridge for an hour and then scored it.

The almond extract surely,brings the bites to another level,it enhances  the almonds and it pairs perfectly with the dates and cocoa!

Pea and green onion pesto

It looks like an eternity since the last time I posted! A great opportunity came up and I start writing for an amazing food blog called eatin’s Canada and my schedule is more full than usual! If only  day had more hours…!


  I experiment  a lot these days. I attempted to make croissant but I failed miserably! Of course I don’t give up! One of my experiments was the pea and green onion pesto. Usually I don’t like peas,but this pesto is so tasty,that even my picky husband enjoyed it,so,as you understand

Servings: 1 cup

preparation time: 5 minutes

Ingredients:

  • 1 cup peas,thawed if frozen
  • 1 clove garlic,smashed
  • 1 green onion,chopped
  • 1/4 asiago cheese,shredded
  • 1/4 cup walnuts,roughly chopped
  • 1/2 teaspoon fresh thyme
  • salt and pepper to taste
  •  1/2 cup olive oil

preparation:

In a food processor, add the peas and the walnuts and pulse,add the garlic,cheese,green onion,salt and pepper,thyme and drizzle the olive oil,till it becomes a nice and smooth sauce. You can add some lemon zest if you desire.

Your sauce is done! I toasted a slice of bread,spread my pesto sauce and a slice of prosciutto..  The flavors are so perfectly blended together,that you will never tell it’s made from peas! The green onion really brightens up the sauce and it takes pesto to another level!

In the end, I think I may fell in love with peas….!
