Orange glazed Japanese doughnut holes.

It’s been surely long time since my last post,but I am here to give you the quickest,easiest and most delicious gluten free doughnut holes! It’s a japanese doughnut,or Mochi as they actually call it. The original mochi,though is not fried After all,you can’t go wrong with doughnuts,no matter where they come from!I found this recipe on this site and I was really curious to try it. Of course, I add couple of things…! The results were really amazing!

Ingredients:

Starter dough:

  • 1/4 cup sticky rice flour. I used Mochiko.
  • 2 tbsp whole milk

 

  • 1 3/4 cup of sticky rice flour
  • 1/2 cup whole milk
  • 2 1/2 tbsp of unsalted butter,melted
  • 1/4 cup of granulated sugar
  • 1 large egg
  • 1 tsp of baking powder
  • zest from one orange

orange glaze:

  • 2 1/2 tbsp of unsalted butter,melted
  • 1 cup powder sugar
  • 1/2 tsp vanilla extract
  • 2-3 tbsp fresh orange juice
  • 1/4 tsp almond extract

 

To make the starter dough:

In a microwave-proof bowl stir the two ingredients for the starter dough. Microwave for a minute until the dough is cooked through,it will look very bouncy. Set aside to cool for 5 minutes.

To form and fry the doughnut holes:

In a stand mixer bowl,use the dough hook attachment,and in the bowl add the 1 3/4 sticky rice flour,the  1/2 cup milk,the melted butter,the sugar,egg,baking powder and orange zest. Add the cooled starter dough and knead the mixture on low speed until everything comes roughly together. Then increase the speed to medium and knead until the starter dough has completely blended into the mixture. The dough  will be wet and sticky,but don’t worry!

Dust a clean surface with sticky rice flour and scrape the dough and start kneading,to prevent sticking. Roll it into 1/2” thick. I used a well flour shot glass to make the holes.

Fry them in canola oil to 330F/165 C,for few minutes. At first they sink,but after 30 seconds they float back up. Fry them until they are golden brown and puffed up.

for the glaze:

stir the melted butter,powder sugar,vanilla and almond extract,then add  the orange juice.

Dip the doughnut holes and devour them! They are tender,melt in your mouth and will satisfy every picky person like my husband!
