Herbed cheese pupusas

image  It’s been really a long time since my last post. I am busier than usual,but I can’t complain! Be stay at home mom is a very underestimated 24/7 “job”. Many people think that is really easy,but they obviously don’t have a clue!

Sometimes,though…Let me rephrase:most of the times though,I miss having a job! But staying at home makes me teaching my kid the manners and principles should have,plus I can experiment more as far as the food! Lately,I tried an El Salvadorian dish called pupusas,which is a dough filled either with meat or cheese. I made my own version of cheese filling.

Is super easy and very tasty!

Ingredients:

  • 2 cups masa harina
  • 1 1/2-1 3/4 cups warm water
  • 1/2 teaspoon salt

For the filling:

  • 1/2 teaspoon fresh thyme
  • 1 cup mozzarella,shredded
  • 1/4 crumbled Gorgonzola or any other blue cheese you prefer.

In a small bowl,combine all the filling ingredients.

In a big bowl,mix the masa harina,with 1 1/2 cups water and the salt together to make a dough. Dumb the dough on the counter. If it cracks you need more water. You will know the dough is right when is smooth.

Break off a handful of dough and form a ball. Flatten the ball slightly and make an indention in the dough and  add a tablespoon of the cheese filling. Fold the two edges like a taco and press together.

Fold the other edges together.

Set the dough on the counter and press the dough to cover the filling.

Flatten it out into a 1/4 inch disc. Don’t press it too much!

Heat a griddle or a skillet over medium to medium-medium high heat and lay the lupus as in a single layer. Cook for 5 minutes until brown.

Flip,and cook for another 5 minutes.
